Vallette corn crackers are made from our very special corn: the seeds have been handed down the family for more than forty years – this is the corn that was planted in Valtellina many years ago. It is characteristically red and sharp, and it bears the mark of the fine palates of our ancestors. We sow the corn in late spring and reap it by hand in autumn, when the cobs are large. We then let it dry naturally. The corn is sown in different spots each year and the soil is treated exclusively with biodynamic fertilizers. During the propitious days we spray the plants and fruits with preparation 501 that brings light into the plant. The taste of the corn depends on the earth and on the way we cultivate it.
